6.6 Midwinter Adventure to Cook Islands

Picture yourself standing by a window in the middle of January, watching the large Wisconsin snowflakes fall to the ground. In the background, you hear the National Weather Service warn of a blizzard approaching and to expect 15 inches of snow in the next three days. In a split second, you remember that last week Wisconsin received 10 inches. Yeppers! That is winter in Wisconsin. You’re not alone. Now, close your eyes and imagine an adventure to the Cook Islands in the South Pacific Ocean soaking up rays of sun on the beach, engaging with the ancient Polynesian culture, whale watching, nightclubs, tropical gardens, kitesurfing, and shopping in the local markets. The Cook Islands offers incredible adventures and memories that you can take back to the cold tundra of the midwestern United States. 

Climate and Locality

November to March is the warm season with the occasional tropical shower and temperature ranging from the low -'70s to the mid -'80s. During the warm season would be the best time for a Midwesterner to Travel to the Cook Islands to beat the cold and snowy climate in Wisconsin. The Cook Islands are in the South Pacific Ocean, northeast of New Zealand. The fifteen islands spread over 850,000 sq. miles and formed from volcanic activity and consist of two regions north region and south region.

4.6 Hearty Deer Camp Chicken and Dumpling Soup

A Hearty Soup that can be served to feed many and is a popular item for our deer camping menu. I will often make a homemade cornbread on a large cooking sheet to accompany the soup.

  • Ingredients
    • Soup Base
      • 4 cups chopped cooked and boned chicken thighs and legs meat
      • 2 cup finely chopped celery
      • 3 cups chopped carrots
      • 3 teaspoons of salt
      • 3 teaspoons black pepper
      • 5 quarts of homemade chicken broth
      • 2 cup chopped onions
      • 6 cloves of garlic minced
      • water or extra chicken broth
    • Dumplings
      • 4 eggs
      • 4 cups a flour
      • 1 cup of milk
      • 2 teaspoons of salt
      • 2 teaspoons of black pepper
  • Directions
    • Stock
      • In a 12-quart stockpot, bring to boil chicken meat, celery, carrots, salt, pepper, chicken broth, onions, and garlic. Add enough water to fill the pot 3 inches from the rim. Bring to boil and simmer on medium heat for 5 hours. Adding water if needed.
    • Dumplings
      • In a large mixing bowl, combined flour, salt, and black pepper.
      • Making a hole in the center of the flour mixture, crack the eggs. Stir with a wooden spoon from the center out, scraping the sides of the bowl. The dumplings should be the consistency of a very sticky dough.
    • Bring it together
      • After the stock has boiled a couple of hours and the carrots are tender. Add water or additional stock if the water has reduced too much.
      • With a wooden spoon, drop dumpling dough by the spoon full into the boiling stock. Stir in between frequently so the dumplings don’t stick together and the free float in the pot.
      • Cover the pot and let boil for 30 minutes. 
      • Check one dumpling by cutting it in half to check it is cooked in the center and not doughy.

3.5 The Flies Changed My Life

Ten years ago, I was sitting in a hired car, waiting for my escort to complete my currency exchange in Luxor, Egypt. I watched a woman covered in black exiting the side street and behind her a pile of garbage that reached the second-floor balcony. I thought her face was covered and she was possibly the wife of an Iman. But I realized she was covered in flies because she had taken both hands and scooped the flies by the handful to expose her face. I was mortified, so I asked the driver why she was coming out of the garbage. “She has no father, brother, son, or uncle.” He dismissively responded. As if it were an everyday occurrence, he had no concerns. When my escort returned to the car, we drove off. My mind was hysterical and racing. Maybe because I lived a very oblivious life or maybe, I was refusing to face the truth about what it means to be a middle-aged woman in today’s world.


That day I realized I had hit a point in my life and found that I had spent all my time and energy on my four sons, husband, mother, in-laws, and siblings. You know the kind of woman I am talking about, the one that gives all and takes nothing. Things have changed over the decades, and the girls and young women have many more options than the generation before had. For eons, our society had looked at the Middle Eastern Culture for suppressing women. The fact is all cultures in one form or another suppress women. As an example, when I was seventeen, I designed my own clothes from sketches, and I played five musical instruments. So, like all the other seniors preparing to graduate in 1983, I went to my guidance counselor and inquired about attending the Minnesota School of the Arts. He padded my shoulder and said, “You would be better off if you found a husband and got married.” After being dismissed by my advisor, I went to my mother and told her what I wanted. “How impractical!”  she responded. 

The long and short of it is I had an American friend who had lived in Egypt for 17 years. Being newly single after 25 years of marriage, I needed a minute to breathe and figure out my future. So, at 43 years old, I had taken a school bus that I was remodeling and sold it to buy a ticket to Egypt. I have a memory that I will never forget because it gave me the drive to get an education and build my personal and financial profile.

3.4 Trash to Treasure

Trash to Treasure, A Day I Will Always Remember  

10 years ago I was sitting in a hired car waiting for my escort to compete my currency exchange in Luxor, Egypt while I watched a woman covered in black exiting the ally. I had hit a point in my life that I found I had spent all my time and energy on my four sons, husband, mother, and siblings. After that day 10 years ago I decided "I will not eat trash". What this means to me is that I have to depend on me. Get an education and build my own personal and financial profile.  

So, I sold my school bus that I had been remodeling and bought a ticket to Egypt.  The long and short of it is I had an American friend that had lived in Maddi, Egypt for 17 years and I needed something new as I had never traveled in those first 43 years. So, I sold the school bus that I had been remodeling, got a passport, and flew to Egypt.
